Authentic Hungarian Goulash

Gulyasleves

  • 2 lb. beef chuck
  • 1 tsp. salt
  • 2 onions, white or yellow
  • 2 Tbsp. lard or shortening
  • 2 Tbsp. Sweet Ann imported sweet paprika (most important to use real Hungarian paprika for ultimate flavor)
  • 2 bay leaves
  • 1 Qt. water
  • 4 peeled and diced potatoes
  • 1/4 tsp. black pepper
    Cut beef into 1 inch squares, add 1/2 tsp. salt. Chop onions and brown in shortening, add beef and paprika. Let beef simmer in its own juice along with salt and paprika for 1 hr. on low heat. Add water, diced potatoes and remaining salt. Cover and simmer until potatoes are done and meat is tender. Prepare egg dumpling batter:
  • 1 egg
  • 6 Tbsp. flour
  • 1/8 tsp. salt

Add flour to unbeaten egg and salt. Mix well. Let stand for 1/2 hour for flour to mellow. Drop by teaspoonful into Goulash. Cover and simmer 5 minutes after dumplings rise to surface.

Serve hot with dollops of sour cream.

Compound Butters 

Soften butter and stir in selected flavoring, place on parchment paper and roll into a log. Refrigerate until firm and use as desired. The Butters should be refrigerate and cut into coins for use. Enjoy them on vegetables, pastas, potatoes, rice, breads, fish or anything you use butter on.

  • Hungarian Butter
    ¼ lb Butter 
    1 Tbs Sweet Goulash mix

  • Garlic Butter 
    ¼ Lb Butter
    1 tsp Gourmet Garlic Cream

  • Fresh Paprika Butter
    ¼ Lb Butter
    2 tsp Paprika Mix Sweet (Sweet Ann)

Flavored Oils

Spicy Pepper Oil
Place oil and fresh crushed hot paprika, Strong Steven, in a clean sanitized clear glass bottle. Shake well and use. For a more intense flavor, place the bottle in sunny window for 2 hours. Refrigerate until needed.

  • 1 cup Olive Oil
  • 1 Tbs Strong Steven Fresh Crushed Hot Paprika Cream

Quick Garlic Oil
To assure that your garlic oil is always fresh and healthy just mix up what you need for each use. 

  • 1 cup Olive Oil
  • 1 Tbs Gourmet Garlic Cream
  • ½ tsp Fresh chopped Thyme

Salad Dressings

Creamy Sweet Pepper

  • 1 cup Yogonéz 
  • 1 cup Vegetable Oil
  • 1 Tbs Sweet Ann

Whisk together Sweet Ann and Yogonéz, while whisking vigorously, slowly pour in the oil. Adjust the flavor with white vinegar and spices to your desire.

Creamy Garlic Dressing

  • 1 Tbs Gourmet Garlic Cream
  • ¼ cup Yogonéz,
  • ¼ cup White Vinegar
  • ¼ cup Vegetable oil

Whisk together Gourmet Garlic Cream, Yogonéz and vinegar. While whisking vigorously, slowly pour in the oil. Adjust the flavor with salt and pepper to your desire.

Spicy Pepper Vinaigrette

  • ¼ cup Vinegar
  • ¾ cup Vegetable Oil
  • 1 tsp Sugar
  • Tbs Paprika Mix Hot

Whisk together vinegar, sugar and Strong Steven. While whisking vigorously, slowly pour in the oil. Season with salt and pepper to your desire.

Honey Mustard

  • 1Tbs Univer Mustard
  • 1Tbs Honey
  • ¼ cup Cider Vinegar
  • ½ cup Vegetable Oil

Whisk together the Mustard, Honey and vinegar. While whisking vigorously, slowly pour in the oil. Adjust the flavor with salt and pepper to your desire.
